Spanish Sofrito Reciupe
Spanish Sofrito is the base ingredient for the Latin taste, to enhanced and deepen the flavor for many dishes. I remember as a kid walking into my house, how I was greeted by the delicious aroma scent of the sofrito, which intensified my hunger. When I began my healthy fitness journey I knew that I had to cut a lot of condiments that I grew up with. I’ll be the first to admit that most condiments my mom used growing up were not so healthy. But If you”re like me that grew up in a Spanish household loving sofrito, I will share a recipe of Spanish Sofrito Recipe from scratch using organic vegetables.
How to make Spanish Sofrito from scratch

Spanish Sofrito ingredients consist of a mixture of natural herbs and vegetables, cilantro, onions, peppers, garlic, and long coriander where you can find it in any local supermarket or Asian market. Sofrito seasoning can be added to almost every dish you’re going to cook; e.g. chicken, meats, stews, and beans. Recipes using sofrito vary because there are so many versions of it. Many Latin moms have their own special versions of making sofrito. Just keep in mind there’s no right or wrong way of making Sofrito. You can add or tweak it to your liking. I like to keep mines simple with the below natural organic ingredients.
Ingredients
1- Bunch of Cilantro 1- Bunch of Recaito /culantro (long coriander)
5-8 Garlic Cloves 2 Onions (you can use Red Onion if you like)1 Green Peppers (*optional- Red/yellow Peppers can be added) 1 Tbsp Olive Oil1 Tsp Oregano 1 Tbsp Apple Cider Vinegar*Optional- Salt ( Himalayan Salt)
Directions
Wash all vegetables, soak cilantro and culantro in water for 15 mins. Cut all vegetables into quarters and place in a food processor, (onion, peppers, garlic, olive oil, vinegar, cilantro, and cilantro) blend until it’s puree to your liking. Once all ingredients are puréed, store them in a container. I would recommend using a glass container because it won’t absorb the odor, but if you used a plastic container make that the designated storage container for your sazon. Plastic absorbs the odor and you won’t be able to use it for something else.

My local supermarket sells these Pre-Cut packages of green and red peppers and onions. I find this so economical and easy to wash and put in food processor. (*optional can add yellow peppers, tomatoes)

Depending on where you live not all supermarkets carry recao/culantro (long coriander), in the event you can’t find recao/culantro (long coriander) you can substitute it by adding another bunch of cilantro. Some supermarket sells the recaito/culantro (long coriander) Pre-package or bunch.

You can use white or red onions, I love to use red onions but whichever you prefer is fine also.


If you grew up in a Latin household you know that the kitchen isn’t complete without a Pilon. What is a Pilon? A Pilon is either a wooden or steel mortar and pestle used to mash up ingredients. My Abuelita (grandmother) and mother always used it to make sofrito. But with modern technology today, we have a food processor that can grind it easier and faster. My grandmother gave me the Pilon in the below picture and when I was moving I found it sitting in the back of my cabinet. Boy, I’m glad I found it, I’ve been using it since. I can close my eyes and still picture my mom and grandmother smashing all the garlic and other ingredients for the sofrito.

A good food processor is to the job done of chopping, mincing, and pureeing ingredients. It has very sharp blades and saves a lot of kitchen time and it is easy to clean.
